Would it be easy to scale the SFS AMI from a small instance to a larger instance?

I understand a small instance is 32 bit, while larger instance are 64 bits...

actually your question is very generic.
Could you be more specific?
Of course if you provide better resources in terms of CPU, RAM and Network capacity you will be able to scale up your application. Once a single server instance is completely full you can add scalability via clustering, and clustering can be done in various ways.
